Wine information
In memory of Emile Zind, Olivier Humbrecht's grandfather and passionate winemaker, this vineyard is eye-catching. This restful retreat, nestled on the west side of the Hengst Grand Cru, is characterised by its hard, rocky, red limestone soil and the majestic beauty of the forest opposite. It is a place of quiet contemplation where the grapes ripen in their own unhurried time. The oldest section of this majestic vineyard was planted in the early 1950s.

Dismantling instructions
Although we tended to vinify this wine separately in the past, we always ended up blending it with our classic Pinot Blanc. In 2021, however, we saw something special in it and decided to highlight it individually. It seemed to capture the pure essence of this exceptional vineyard. The annual yields were quite low and the wine went through a lengthy fermentation and ageing on the lees before it was completely dry.

Scent
The bouquet unfolds with notes of quince, pear and apricot, followed by the tart accents of toasted almond and freshly churned butter with a hint of flint. In addition, notes of candied ginger and honey emerge, reminiscent of freshly toasted baguette with salty butter. However, what characterises it most is a hint of limestone, which gives it depth and underlines the complexity of its personality.

Flavour
The 2021 Auxerrois Rotenberg surprises the taste buds with its cool delicacy and invigorating freshness. Its juicy fruitiness is complemented by robust tannic structures that give it both a delicate flavour and remarkable complexity. It is a wine that evokes an irresistible desire to drink and at the same time astonishes with its complexity, a confirmation that the decision to produce this wine individually was the right one.

Alternatives to food recommendations
This wine is perfect with green asparagus garnished with sea salt butter and a garnish of figs and chervil. Alternatively, it can be served with savoury dumplings filled with chicken breast, tripe and mushrooms. For fish lovers, roasted pike perch would be perfect, accompanied by a shallot and white wine sauce and peaches.
