Wine selection
The quintessence of volcanic soils and high altitude vineyards, handpicked and precisely vinified, is found in this 2021 Auxerrois 350 N.N.. The limited production includes 3105 bottles of 0.75l, 90 of 1.5 litres and 12 of 6 litres.
Visual perception
The wine presents itself in the glass in a bright golden yellow, interspersed with silver highlights.
Smell
A captivating composition of scents lifts the edge of the glass: woody pear, quince and citrus mingle with the essence of a meadow in bloom - full of flowers and herbs. Fennel and anise round off the bouquet, while stony notes convey a freshness that makes you curious to take your first sip.
Taste
On the palate, the wine unfolds its liveliness with herbal nuances, complemented by a moderate alcohol note of 11.0% and a discreet acidity. This makes it a true all-rounder and ideal food companion - especially with discreetly spiced fish dishes and multi-faceted vegetable cuisine. And to fully develop its complex character, we recommend using large-volume glasses.

Some recommendations that pair harmoniously with this wine are a creamy cauliflower soup complemented by the crunch of apples and almonds, root vegetables served with a sophisticated orange and white wine foam and lemon thyme, or steamed cod accompanied by a crunchy fennel salad.
