Color
In bright straw gold with a sheen of copper and amber and the faintest hint of cloudiness, the wine shows in the glass.
Nose
Initially somewhat introverted, this cuvée of mainly Trebbiano, Malvasia and Vermentino opens up like a fan after some time in the air and in an appropriately large wine glass. Its yellow, ripe fruit, reminiscent of grilled pineapple, mirabelles from the oven and dried apricots, plays a very important sensory role, but by no means the main one. This is an aromatic ensemble work. Floral notes of sunflower, roiboos, chamomile and hayflower condense with toasted cashew and safflower oil. Leathery animal flavors lend robust depth and grip to the mash-fermented wine.
Palate
On the palate, Calafata's 2017 Almare generously flashes its fruit for a moment, but then immediately relegates it to the background. The fine-grained, yet grippy tannin that its 20-day maceration has given it makes it a color-blind wine, or in other words, a white wine that drinks like a red wine. Subtle drying tannin meets moderate yet bracing acidity and, despite the refreshing bitterness, a pleasantly lean body. This wine explicitly calls for hearty food to fulfill its purpose.

- Breast and leg of pheasant with Brussels sprouts, chanterelles and cauliflower puree
- Fillet of veal wrapped in bacon with roasted green asparagus and salt-crusted potatoes
