Color
:
Bright straw yellow with a silver tapered rim, bright and clear.
Nose
:
The nose is firm and spicy, almost unwavering in its distinction. The fruit plays second fiddle here, herbaceous notes of thyme, nutshells, light tobacco are the clear leitmotif. All this seems youthfully taut, the maturity gives it the necessary adolescence for this self-confident appearance.
Mouth
:
Tightly lashed, it shows its assets, which only the courageous fall into the carafe is able to decipher. The acidity sets the pace, and the rest of the orchestra takes its cue from it. With a rich extract, the fruit is sparse, almost sinewy and leads to the chorus: the present minerality and the warm, full phenolic join in and give it a good bass.

(Vegetables & Vegetarian, Salads, Spicy Vegetables, Fruits & Nuts, South Fruits)
- Poached trout with lemon thyme sauce and leek vegetables
(fish, trout, vegetables & vegetarian, onion vegetables, spice vegetables)
- Veal scallop
(giblets)
