Nose
On the nose, the Wachisnais Vermouth blanco spreads an enormously floral note. Lavender flowers, white lilac and jasmine. Lavender soap also comes to mind. Lemon and orange zest as well as tangerine skin clearly come to mind. Essential notes suggest pine needles, thyme and sage. White peach, nectarine and mirabelle plum spread slowly but extensively. Delicate hints of dried fruit join in. Peppermint and eucalyptus set the final chord alongside aniseed and fennel.
Palate
On the palate, it is initially reminiscent of tart apples and pears eaten with the skin on. Sweetness, acidity and bitterness are in good harmony with each other. The bitter notes dominate the flavour. In the aftertaste, juniper and sage clearly characterise its aroma profile. It reveals a little melting and a delicate tannin. Provided with grip, it also offers variety in the glass at the second and third sip.
