The grapes for this classic Valpolicella come from east-facing vineyards in Marano and Fumane. These are located at about 300m above sea level and are mainly characterized by shell limestone soils with clayey overlay.
After manual harvesting, the wine is fermented spontaneously in large wooden fermenters.
Color
The wine shows itself in a slightly translucent garnet red with a purple core clear and shiny in the glass.
Nose
First thought red fruit jelly par excellence! No cream, though, and studded with fresh, rather than preserved, fruit. Blueberries and cranberries cavort with red currants and ripe heart cherries. The latter have fun in their red shades with fresh coffee cherries, the shrub and skin of vine tomatoes and the subtly acidic spice of a veal tartare with rosemary. The whole happens on a peaty bed of dry forest soil, some pipe tobacco and black tea.
So smoked chili, salt and pepper on the table!
The appetite has already set itself to celebrate before the first sip.
Palate
Slightly plummy on the attack, a blob of blue casts itself over the bright red in the mouth and the flavor picture duskily approaches the color of the wine.
This Traditional Valpolicella represents a successful balancing act between pristine rusticity and refined elegance. The 2019 Valpolicella Classico from Ca`La Bionda has a fine-grained, pleasantly noticeable tannin that rides waves of red-fruited juiciness that makes your mouth water.
In the most positive sense, this is a mouthful of wine that even sneaks up on you treacherously.
Drink slightly chilled, at 15°C, from large glasses.
