Wine information
The Pinot Noir comes from five plots totalling two hectares in Volnay on the lower and upper parts of the slope. The average age of the vines is 34 years. They are deep soils with a clay layer on a limestone base. Fermentation took place in open vats, ageing over 18 months in barrels. The proportion of new wood was 25 %.

Nose
The Volnay Village 2019 is both fresh and yeasty on the nose and, together with the slightly acidic notes of barberry and cranberries, is reminiscent of sourdough bread. The fruit here seems brighter and fresher than in the 2018, but also a little more demanding and less full and noble. Instead, it is a very complete, coherent wine. Volnay with slightly ethereal hints.
Palate
On the palate the Volnay Village juicy and almost drinkable. One notices directly This has aspirations, but remains uncomplicated in the best sense and simply makes you want more in the combination of red berry fruit, a little milk chocolate, herbs, a little flint, undergrowth and bresaola. The tannin is, typically for Bouley, elegant and powdery, but it is slightly grippy and the acidity is quite precise.
