Wine information
The wine comes from the single vineyard Les Saucours. The parcel is located in the south of Savigny-lès-Beaune, on the road to Beaune, at medium altitude, facing east. With its eight-year-old Chardonnay vines, it covers 0.6 hectares and was planted with a vine density of 10,000 vines/hectare. The yield is around 35 hl/ha. The soil is characterised by clay and loam on limestone. The wine was fermented in barrels and tonneaux, aged in used barriques and tonneaux with 15 to 18 months on the fine lees. The wine was bottled without the addition of sulphur.

Nose
The white unsulphured Savigny-lès-Beaune from Les Saucours is a wine from young vines that initially appears similar to its lightly sulphured counterpart. It offers a lively scent of green and yellow pears, as well as zested grapefruits. But the waxy notes and those reminiscent of honey take up more space here with air, the wine appears more open, warmer and shows slight oxidation notes reminiscent of Fino-Sherry with roasted hazelnuts. However, this does not dominate the overall impression, but fits into the overall picture. There are also notes of white lilac, plus some warm puff pastry and herbs.
Palate
On the palate the Les Saucours sans soufre Power and silkiness in the texture. The wine is opulent, ripe and juicy, as well as punchy and fresh with the ripe and lively acidity typical of 2018, which is extremely encouraging to drink. The absence of sulphur means that the Burgundy presents itself already now open and inviting. The ripe fruit is underpinned by tart ripe grapefruit notes, some pear and quince, wax and stone. The Chardonnay is saline, also very slightly oxidative on the palate and - although fully fermented - shows a subtle sweetness reminiscent of butterscotch. The wine is also impressively tension-filled and lively.
