Colour & Appearance
Luminous golden yellow with amber-hued reflections that reveal the considerable ageing time. The perlage presents itself as abundant yet delicately fine-bubbled – a visual foretaste of the complexity of this extraordinary Champagne.
Nose
A masterful balance between maturity and freshness: apple-cinnamon cake and lemon meringue meet ripe stone fruit. Beneath lies a seductive foundation of brioche, roasted almonds and subtle toffee notes. The nose is classic, pure and absolutely inviting – a textbook example of aged Meunier.
Palate
Here reveals the true greatness of this Brut Nature: opulent and lively at once, elegant and refined. Sixteen years on the lees have developed caramel and toffee, yet the vibrant, remarkably fresh acidity holds everything in perfect balance. Without dosage, the pure essence of the terroir unfolds – nothing is hidden, everything harmonises.
Finish
Long, precise and with lingering freshness. The mineral component of the chalky clay comes to the fore and leaves a saline, appetite-stimulating aftertaste.
Terroir & Origin
From the single vineyard site „Pierre de Bellevue“ in Œuilly in the Vallée de la Marne. The vineyard sits at 125 metres elevation with a 15% slope and north-east exposure above the Marne. The chalky clay from the Sparnacian (Ypresian) period shapes the character decisively.
Grape Variety & Vinification
100% Pinot Meunier from massal selection dating from 1947. Hand-harvested on 21 September 2006, spontaneous fermentation and 7 months on lees in Burgundian oak barrels. No malolactic fermentation, no fining. Bottled in May 2007, 16 years on lees in bottle, disgorged in June 2023. Brut Nature – 0 g/l dosage. Only 1,300 bottles produced.
Food Pairing Suggestions
Pan-seared scallops, truffle mushroom dishes, poularde with morels, aged Comté or brioche with foie gras. The complexity pairs well with bold flavours, the acidity cuts through fat and creaminess.
