Wine information
The Dolcetto Bric del Salto® comes from three different sites in Neive with a total of 3.5 hectares. They are the Cottà, Basarin and San Cristoforo vineyards. The wine was fermented with the vineyard's own yeasts for around twelve days. Malolactic fermentation was completed in stainless steel, where the wine was also aged for six months.

Sottimanos 2020s Bric del Salto is a Dolcetto, and it is a paragon of ripe fruit and fine spices. It spreads a lavish scent of black cherries, cherry juice, blackberries and umeboshi, liquorice, lavender, mint and a few cherry stones with the typical bitter almond note.
Mouth
On the palate, the Dolcetto is refreshingly tart despite its rich ripeness, showing tannin, juice and the acidity and warmth of freshly baked sourdough bread. A mere twelve vol.-% means that one likes to drink a glass more here than with many other wines. Piedmontesewhich quickly have three degrees more. The wine has pressure and clear contours. This is a head of character that oscillates relaxed between juiciness, a creamy feeling on the palate and unadorned joie de vivre.
