The Sinople - the word stands for a certain shade of green in heraldry - is a Chenin Blanc that comes from the 0.68 hectare Clos de Coulaine site directly at the winery. The vines of this Cru Supérieur, which are around 30 years old, stand on a soil with clay and silt in the topsoil and white tuff in the subsoil. After whole cluster pressing, the Chenin Blanc was fermented spontaneously in wood, underwent malolactic fermentation and was aged for eleven months on the lees in barriques with a new wood content of 20 %. Bâtonnage was carried out from time to time. After ageing in barriques, it was matured for another eight months in stainless steel.

Nose
In colour as well as on the nose, the Sinople Ripe and full with notes of yellow as well as white fleshed stone fruits, pears, quinces, kumquats and some honey. Despite the ripeness of the fruit, the Chenin Blanc also shows fresh mineral and stony notes, which form a successful balance on the nose and are underlined by a slightly smoky note.
Palate
On the palate, the Chenin Blanc presents itself almost voluptuously ripe and juicy. However, Jean de Bonnaventure gets the curve towards a fresh vein with a ripe acidity and a balancing minerality. The lush fruit seems fleshy, is complemented by liquorice and saffron and glides silkily into the long finish.
