Product information
Our "π No." has evolved from the fine art of making a cuveé of Burgundy grape varieties and Chardonnay. The latter was only recently revealed to be a distant cousin of the Burgundy/Pinot family. Driven by this discovery, we have been making sparkling wines from these grape varieties since the early 90s with great success, mostly from the classic Champagne varieties Chardonnay and Pinot Noir.

Maturation details
This sparkling wine is made from Blanc de Pinot Noir and is subject to a production method similar to that of Champagne. After the manual harvest, the whole grape pressing follows, whereby only the first "cuvée" press fraction is used for the sparkling wine. Fermentation and storage of the base wine are carried out in used small wooden barrels. Only after three years of bottle ageing and after separation from the yeast, it is disgorged without dosage.

Appearance
With a bright, sparkling golden yellow and soft copper reflections, the fine bubble distribution is a real feast for the eyes.

Aroma
This sparkling wine promises excellence in the art of sparkling wine, with rich and intense aromas. The yeasty and creamy aromas plunge you into a sea of croissants fresh from the oven and fruity notes of apricot, apple and wood pear, accompanied by grapefruit zest, minerality, yeast and subtle toasted aromas.

Taste
Once on the tongue, this drop delights with its powerful and densely woven structure as well as stimulating characteristics. The juicy fruitiness of apricot, apple and pear, paired with the tart citrus note of grapefruit, gives it charm, including the perfect Burgundy finesse and salty spice in the long finish. A true taste experience and excellent food companion that only reveals its beauty when exposed to low oxygen - best served slightly chilled from a medium-sized white wine glass.
