Wine information
The situation Les Chailloux comprises two plots totalling 0.6 hectares in a south-west facing location at an altitude of 250 metres. The vines are 40 to 47 years old and are rooted in a silex soil not dissimilar to that of Pouilly-Fumé. The grapes were harvested by hand, sorted and then pneumatically pressed very slowly. Clarification took place cool and by gravity. The juice was fermented spontaneously and matured on the lees for 14 months in wooden barrels. The yeast was only stirred sporadically. Stéphane Riffault avoids malolactic fermentation.

Nose
The Sancerre »Les Chailloux" comes from soils with a high proportion of silex, which is reflected in the wine with a delicate flinty note. The slightly flinty flavour is just one aspect among many, however, and not a dominant one. Rather, this aroma is accompanied by flavours of lily of the valley, lemons and limes, white currants, a hint of green pineapple and green pears.
Palate
On the palate the Les Chailloux Just as precise, bright and clear as a bell as in the fragrance. It is a taut, linear Sauvignon Blanc, in which the wood tone does not interfere at all, but supports the complex play in its finesse without overpowering it. This is a tonic, salty, energetic wine with many different citric notes, white-fleshed fruit, stone and petrichor and at the same time with notes of white nougat and a hint of vanilla. It is very complete and sensual.
