Wine Description for Le Grand Blanc de Revelette IGP 2021 by Revelette
- Colour & Appearance
- Medium straw yellow with brilliant clarity – a wine that announces its southern provenance and refined elegance already in the glass.
- Nose
- Seductively complex: orange blossom and almond blossom meet ripe green and yellow pears. With air contact, a fuller aromatic profile unfolds of yellow melons, grapefruits and lemon zest. Despite all its southern opulence, the 2021 remains pleasantly lean and precise – an elegance that Peter Fischer masterfully brings out.
- Palate
- Here the true class of this wine reveals itself: noble and elegant with fine oak spice and herbal notes that integrate perfectly into the white-fleshed fruit. Pear cream, liquorice, saffron and cinnamon form a harmonious flavour profile. The Sauvignon Blanc contributes a ripe-green note and white berries. The acidity presents itself with southern ripeness, yet elegant and well-structured.
- Finish
- Long and expressive. The full fruit is carried by the fine acidity structure and fades harmoniously with spicy notes.
- Terroir & Origin
- Château Revelette is located near Jouques, approximately 30 kilometres north of Aix-en-Provence in the shelter of the legendary Montagne Sainte-Victoire. The 30 hectares of vineyards are distributed across 17 parcels – a diversity that lends this wine its complexity.
- Grape Variety & Vinification
- A thoughtfully composed cuvée of 65% Chardonnay, 17% Roussanne, 9% Sauvignon Blanc, 5% Ugni Blanc and 4% Rolle. Spontaneous fermentation in three different ageing methods: 30% in stainless steel at 18°C, 40% in one to four-year-old barrels with ten months on lees and regular bâtonnage without SO₂, 30% in 25-hl barrels. This vinification creates remarkable depth and texture.
- Food Pairing Suggestions
- Perfect with bouillabaisse with saffron, veal loin with lardo, thyme and mushroom-lemon cream or an aromatic basmati with almonds, pistachios, cardamom and candied orange peel.
- Special Characteristics
- With a pH value of 3.32, less than one gramme of residual sugar and only 54 mg/l total sulphur, this wine demonstrates technical precision alongside aromatic fullness – a masterpiece of Provençal white wine craftsmanship.
