Wine information

30 hectares of vineyards, spread over 17 parcels near Jouques, located about 30 kilometers north of Aix-en-Provence in the protection of the Montagne Sainte-Victoire, belong to Château Revelette. And Le Grand Blanc 2021 is a cuvée of 65 % Chardonnay, 17 % Roussanne, 5 % Ugni Blanc, 9 % Sauvignon Blanc and 4 % Rolle. The grapes were destemmed, 30 % fermented and aged in stainless steel at 18 °C, 40 % were aged in one to four year old barrels for ten months on the lees without SO2but aged at regular bâtonnage, and the remaining 30 % were fermented and aged in 25hl barrels. In each case, the wine was fermented spontaneously. The pH is 3.32, the residual sugar is less than one gram, the acidity is 3.25 grams and the complete sulphur is 54 mg/l.

Nose

Le Grand Blanc, the great white by Peter Fischer, also inspires in the 21st vintage. The cuvée smells of orange and almond blossom, ripe green and yellow pears. With air, the wine becomes fuller and reminds of yellow, but not yet too ripe melons, grapefruits and lemon zest. The vintage appears pleasantly lean with all the southern aromas that the Grand Blanc undoubtedly possesses.

Palate

On the palate, the wine becomes noble and elegant with fine wood spice and herbaceous spice that blends perfectly with the white-fleshed fruit. It tastes of pear cream, liquorice, saffron and cinnamon. The Sauvignon Blanc also brings a ripe green note and white berries into play. The acidity seems ripe to the south, but elegant and fine. It carries the full fruit of the Le Grand Blanc exemplary into a long finale.
