The essence of wine
Our Sauvignon Blanc finds its origins in the Terres Blanches, in soils rich in white clay, marl and Kimmeridge limestone, which harbour traces of oyster fossils. Cultivated according to strictly organic methods since 2009 and biodynamically since 2015, the Sauvignon vines thrive in several plots over a total of 8.32 hectares. These vines, at the proud age of 35 to 40 years, characterise this wine. It is made with 40mg SO2 in stainless steel vats, filtered before bottling for purity.

An expression of vivid to intense straw yellow is revealed when viewing the wine.

Fragrances
On the nose, an unobtrusive iodine tincture aroma unfolds on a gentle salve base, supported by tangy notes of salt lemons and limes. The fragrance is infused with accents of boxwood leaves and vine clover, resulting in a cool, fresh expression of the terroir.

Taste experience
The Terres Blanches fascinates on the palate with a grippy and powerful structure, bright and clearly defined. The aromas are on the citrus and green-fruited side, introduced by an initially noticeable creaminess and a hint of caramel. From the middle of the palate experience, its character strengthens, becomes more straightforward and spicy, with a lime bitter note, a hint of bitter lemon and a clear, vibrant minerality and acidity structure that lingers long in the memory.

Accompanying dishes
The wine pairs perfectly with grilled seafood such as prawns with a light avocado and citrus salsa and a fennel couscous salad. Enjoy the Sauvignon Blanc also with oysters, refined with a lemongrass and ginger vinaigrette, or with roasted mini peppers (Pimientos de Padron) with a dash of olive oil and sea salt.
