Wine information
The Souvignier Gris is in the vineyard of Steffen Mugler, who started the project with Andreas Schumann and Götz Drewitz. The whole grapes were fermented spontaneously and left on the skins for longer. Fermentation as well as ageing took place half in stainless steel with whole berries and half in the Georgian Quevri buried in Mugler's garden on the destemmed mash. Both lots were separated from the mash after one year and brought together to form a cuvée. The bottling was unfiltered, but this year with a marginal addition of sulphur.

Nose
Ideally, you pour the wine into a carafe. Then the PIWE Souvignier gris the necessary space to develop and it begins to smell of crumbly apples, pears and pear quince. In addition, there are notes of a little yeast, wax and some hops. The scent of a freshly baked apple pie lingers with me.
Palate
On the palate, the 2020 PIWE Souvignier gris Clear and exciting with a clear fruit component of ripe pome fruit. However, it is actually characterised by the mouthfeel, the texture, the fine sweetness of the yeast and the drier character. Dry extract and some tannin provide a pleasant texture in this wine, which definitely has power, body and melting. The characteristics ensure that the wine can be used as an excellent universal food companion.
