In 2019, Boris Champy took over the domaine founded in 1984 from Didier Montchovet. Champy, who previously managed estates such as Dominus in California, Louis Latour and Clos de Lambrays, took over the domaine, which had already converted to organic and then biodynamic farming in the 1980s, making it the first Demeter-certified estate in Burgundy. Today, the estate comprises twelve hectares in the once cooler Hautes-Côtes de Beaune, which Boris Champy sees as the future of Burgundy due to climate change.
The base wines for the Cremant come from Boris Champy's Negoce project, Petit Aigle, named after the local snake eagle. For this, he buys grapes from friendly producers who also produce according to organic or biodynamic guidelines in order to expand the spectrum of sites and their characteristic expression. The Cremant consists of 100% Aligoté and was disgorged in March 2022.

Nose
On the nose, the 2019 Petit Aigle Cremant de Bourgogne from Boris Champy is rich with expansive fruit and a juicy nature. Stewed pears, vanilla cream, quince and stewed fruit outline the expansive nose, which is complemented by delicate citrus notes. Add to this a freshly picked bouquet from a summer flower meadow and a handful of crushed oyster shells - and the bower is ready!
Mouth
On the palate, the Cremant opens with a nonchalant and highly petite mousseux before the rich yellow fruit takes over. Quinces and small plump pears open, some white peach with red cheeks follows on the tread. Generous with a rich melt on the palate, it is tartly contoured and accelerated by ripe acidity that knows how to hit the notch of salty minerality.
