The Azienda Agricola Sottimano was bought by Rino Sottimano in the 1960s and is located in the middle of the Cottà vineyard. In the following years, it was successively expanded to include the Currá, Fausoni, Basarin and Pajoré crus. Today, the winery is run by son Andrea and his sisters Elena and Claudia. Situated in the triangle of Barbaresco, Neive and Treiso, Sottimano has been working according to biodynamic guidelines for years.
The fermentation is always spontaneous with their own yeasts, the maceration is usually 25 days and the BSA is also spontaneous in French oak. The wines mature for 15 months in tonneau and are bottled unfined and unfiltered.

Nose
The nose of the 2020 Pairolero Barbera d'Alba from Azienda Agricola Sottimano is voluptuous and hedonistic with expansive, rich fruit and a ruby-red shimmer. The striking dark cherry and fully ripe blackberry have a tart underlay of notes of mocha, walnut shells and leather, with a balsamic base of juniper and allspice. As is so often the case with Barbera, a fine floral note hovers above it.
Mouth
On the palate, the Barbera Superiore is sinewy and taut. With a profound acidic nerve and tightly woven tannins on the tongue, it flows towards its destination at high speed with immense drinking power and shows a special transparent freshness in 2020. The red fruit is reminiscent of redcurrants and sour cherries, along with tart notes with a stimulating phenolic feel. A Barbera with rally stripes.
