The history of the Matassa winery goes back to 2003, when Tom Lubbe ventured into self-employment after several years at Domaine Gauby. Since then, it has developed into one of the quality pioneers of Roussillon and biodynamic viticulture.
The winery moved from Calce to Espira d'Agly in 2019 and now cultivates around 15 hectares. Lubbe is particularly fond of the soil life and has been making his wines only as Vin de France for a few years now, thus foregoing a higher classification for the wines.
Since 2015, no sulphur has been added to any wine, the wines have continuously lost alcohol and have always become finer in their expressiveness. All wines, white and red, are macerated on the skins and often fermented with stems. If the wines are matured in wood, this only serves to acclimatise them to oxygen rather than as a flavour-giving parameter.
The Olla Rouge is a cuvée of Grenache Noir, Grenache Gris and Macabeu. The whole grapes were fermented for a long time on the skins and bottled unsulphured without filtration or fining.

Bright garnet red with slight cloudiness.
Nose
The Grenache Noir combines with the white Grenache Gris and Macabeu varieties to create a spring-like and red-fruited excess in a class of its own Cherries, mallow leaves and hibiscus combine with raspberries, redcurrant leaves and a pot of red fruit tea to create the perfect refreshment for adults on sunny days. Unrepentant 11% allow uninhibited to unrestrained refilling.
Mouth
The excessive pleasure continues on the palate. With a trendy, grippy feel, it can also be chewed, thanks to the small-part tannins that are reminiscent of the finest sandpaper, before you treat yourself to another generous sip. Transparent, delicate, invigorating and refreshing, this cool drink is a diametric reflection of its hot home.
