The Pouilly-Fumé is a single-varietal Sauvignon Blanc from Guillaume Sorbe. The fruit comes from some plots he owns in Pouilly-Fumé. Together with the Le S des Poëte it is always the youngest wine of the winery, and it has been aged for a little over a year, mainly in tank and in small parts in a used 600-litre barrel.

Nose
Guillaume Sorbes Pouilly-Fumé is a purist-looking Sauvignon Blanc that hardly takes on the flinty notes often associated with Pouilly-Fumé, but instead combines a very pure and clear aroma of limes, mandarins, gooseberries and pureclaude with some crushed lime and verbena as well as white flowers.
Palate
Also on the palate, this Pouilly-Fumé brilliant and pure with great vitality, freshness and finesse. I am thrilled by the pressing acidity and the mineral structure, which is accompanied by mouthwatering saltiness. Green ripe fruits, yellow citrus fruits and again a little lime and chalk provide the appropriate aromatics. It is again a wine with pulsating energy in 2020.
