Wine information
The Grüner Veltliner comes from the Steiner Schreck vineyard. The site is very steep, the vines stand on small terraces of around four to five metres deep, characterised by Gföller gneiss and granite. The vines are 100 years old and are demeter-certified managed. They have a 2.4 metre high foliage wall. The site is located at around 320 metres above sea level.
The harvest took place on 6. 9. 2019 around 65 days after flowering and thus earlier than ever before. However, the grapes were physiologically ripe and Markus Lang harvested at a pH of 3.0. This early harvest time resulted in an alcohol content of only 11.5 vol-%. The GV was pressed extremely slowly over two days on the self-designed 100-tonne tree press. The pressing process itself is completely reductive, but afterwards the juice has time to brown, i.e. it is deliberately exposed to oxidation.
The juice was fermented spontaneously and aged for two years on the full lees in large 1,000-litre wooden barrels and bottled unfiltered in March 2022. During fermentation, Lang added 3 to 5 % destemmed grapes, which fermented intercellularly, thus repeatedly kick-starting the fermentation process despite the constant 9 °C in the cellar. Later, the wine was minimally sulphurised.

Nose
While the Cold and Clear Grüner Veltliner rather expressive with younger wood, is Act Three A shy representative at first, but with plenty of time and air, it develops into a full-grown specimen. After exposure to air, the wine appears increasingly vibrant, bright and clear with a lot of citrus juiciness, some white and yellow fleshy fruit, herbs, rocks and discreet wood and lanolin.
Palate
The Grüner Veltliner clothes the palate with a noble velvetiness and a very light tannin. The mouth filling effect of the Third Act, hedonistic, bright and clear with pleasant pressure and a very slightly oxidative and yeasty tone. It offers more acidity than the Cold and Clearbut this only becomes obvious with the second sip. The acidity seems mature, but shows itself subliminally with deep minerality. The handbrake is still on. One can already sense the whole dimension of complexity, but not yet fully grasp it. In this respect, one should also be able to understand the comparison that Cold and Clear more like a Genevrières, Act Three but to a Perrières reminiscent. Definitely a highly exciting wine, extremely salty, creamy and sensual in the finish, with clear elegance.
