Information

The Saint-Romain Combe Bazin comes from the site of the same name in the south-eastern area of the appellation towards Auxey-Duresses. Combe Bazin also faces southeast and lies at 360 metres. In the vineyard with white limestone soil, the so-called Calcosol sur marne de Saint-Romain, stand 30-year-old vines. After hand harvesting, partial destemming and spontaneous fermentation took place in stainless steel cuve and a blend of Pigeage and ReassemblyThis is a process of punching down and overflowing of the grape marc. Malolactic fermentation took place spontaneously in the barrels. The wine was aged for ten to twelve months in a mixture of 228-, 350- and 500-litre barrels.Barriques and in Tonneaux, of which a maximum of 10 % are replaced annually. The wine was tasted daily and the barrels were drawn off when Frédéric Buisson deemed it appropriate. It was fined with bentonite and filtered only very coarsely. Sulphur was only added at bottling with a maximum of 40 to 50 mg/l total sulphite.

Color

Medium, slightly transparent crimson

Nose

The Saint-Romain Combe Bazin 2021 is a floral wine reminiscent of rose petals and hedge roses. There are also notes of sweet and sour cherries and some abrasion of blood oranges. Underneath, one finds some undergrowth and blond tobacco. The effect is elegant and transparent.

Palate

On the palate, the Saint-Romain shows a similar transparency between flowers, especially red fruits and undergrowth with a still somewhat rough tannin and a lively acidity. The Pinot Noir appears linear and fresh on the palate with a little warmth, but also with tart notes on the finish. It still needs a little time to find itself.
