Colour & Appearance
Medium, slightly translucent carmine red – typical of the elegance of Burgundian Pinot Noirs from cooler sites.
Nose
Beguilingly floral with rose petals and wild roses, interwoven with sweet cherries, sour cherries and delicate nuances of blood orange zest. Beneath, undergrowth and blonde tobacco shimmer through – an aromatic profile of captivating transparency and Burgundian finesse.
Palate
Linear and fresh, this Saint-Romain presents itself with a vibrant acid structure and still somewhat rough, youthful tannins. Red fruits dominate, accompanied by floral notes and earthy undergrowth tones. A subtle warmth caresses the palate, whilst astringent notes in the finish remind one of its ageing potential.
Finish
Medium length with astringent tannins and a pleasant freshness that invites the next sip. The wine still shows itself somewhat closed – patience will be rewarded.
Terroir & Origin
The Combe Bazin vineyard site lies at 360 metres altitude in the south-eastern part of the appellation, facing south-east. The white limestone soil (Calcosol sur marne de Saint-Romain) and the 30-year-old vines lend the wine its characteristic minerality and elegance.
Grape Variety & Vinification
Pinot Noir from hand harvest, partially destemmed and spontaneously fermented in stainless steel tanks. Maturation over 10-12 months in barriques of various sizes (228 to 500 litres) with a maximum of 10% new oak. Spontaneous malolactic fermentation, bentonite fining, coarse filtration. Minimal sulphur addition (40-50 mg/l) only at bottling – an almost natural approach.
Food Pairing Suggestions
Excellent with grilled Pata Negra pluma with gratin dauphinois, pumpkin risotto with cinnamon or a rustic terrine of chicken liver and pork. The wine’s freshness and structure also harmonise wonderfully with roasted poultry.
Special Features
An authentic, artisanally produced Burgundy with minimal oenological intervention. The 2021 vintage still needs time – ideal for lovers of classic, unadorned Pinot Noirs with ageing potential.
