Wine information
The Fixin comes from the Les Champs de Vosger site below the village, with light sandy soils. From the 70-year-old vines, Jérôme produces part of the Sélection massale. The vineyard work is organic, partly biodynamic and therefore very labour-intensive. The Pinot Noir was fermented in tanks, largely destemmed, and aged for twelve months in used oak barrels with little new wood. Jérôme used only indigenous yeasts, there was no fining, no enzymes and only a light filtration as well as no doses of SO2 or if they do, then only very little.

Nose
The Fixin appears clear and present with a distinct aroma of wild strawberries, forest floor and undergrowth with some splashes of blood orange. The Pinot combines a sweet note with a dark earthy note as well as freshness in the aroma.
Palate
On the palate, the Fixin with a dark fruit, with extract and extract sweetness. This comes across as juicy and charming. The acidity is still very much in the foreground, as is the dark spiciness. Towards the finale, the Pinot Noir seems drier and drier, but a note of liquorice becomes increasingly present.
