Romain and Damien Bouchard are the brothers behind the re-founding of Domaine de l'Enclos. They worked in their parents' domaine from an early age and know Chablis inside out. A few years ago, Romain was able to take over the Domaine de la Grande Chaume, which he converted to organic farming. They merged this domaine with the parental one and founded l'Enclos. Here, too, the focus is on organic cultivation, which has been supplemented by biodynamic methods since 2017. A lot of effort is put into the vineyards, which include some of the fillets of famous cru sites such as Fourchaume, Blanchot or Les Clos. In the cellar, the two rely on a mixture of stainless steel and used wooden barrels. This gives the Chardonnays the perfect balance of freshness, power and clarity, but also structure and elegant opulence. The results are incredibly drinkable Chablis.
