10% Pinot Noir aged for one year in barriques give this rosé its beautiful colour. The Chardonnay, which dominates with 90%, is vinified in small barrels. Through the so-called Bâtonnage, i.e. regular stirring, it gets a very special characteristic rounded elegance.
Color/Look
Salmon pink with delicate violet reflections. Broad, very fine mousseux.
Nose
On the nose, the Champagne Cuvée des Caudalies Rosé from de Sousa is full of character. Fruity notes such as wild raspberries, rose hips, quince bread and cherry stone mingle with animating floral hints reminiscent of roses, elderberry pulp, tree bark and forest foliage. The distinctive impression is pleasantly enhanced by spicy notes such as cinnamon and clove.
Palate
Spice is also what the Champagne Cuvée des Caudalies Rosé by de Sousa conveys on the tongue. This impression in combination with the tart fruit makes it a pleasant exception and the perfect food companion of autumnal and winter cuisine.
