Colour & Appearance
Luminous ruby red with violet reflections – a youthful, crystal-clear Sangiovese that already displays its vitality in the glass.
Nose
Noble restraint characterises this 2020: sour cherry in deep ruby tones, framed by the typically Tuscan macchiabay leaf, thyme, rosemary. Beneath lie spicy layers of juniper, sandalwood and black olives. A bouquet that favours elegance over opulence.
Palate
Here the I Tre Borri reveals its true temperament: the cherry fruit unites with Mediterranean herbs to create an aromatically profound experience. A broad arc of acidity carries the wine with impressive momentum across the palate. Fine-grained tannins caress the fruit, whilst a noble bitterness – Sangiovese in its purest form – lends additional complexity. Precise, vibrant, expressive.
Finish
Ethereal and fruity at once, with remarkable length. The cherry resonates, accompanied by herbal notes and that characteristic bitter tone which distinguishes great Sangiovese.
Grape Variety & Vinification
A blend of 90% Sangiovese and 10% Canaiolo, vinified with artisanal precision: hand-harvested, separate fermentation by vineyard site, spontaneous fermentation in small one-tonne vessels. Maceration lasts 21-35 days, extraction proceeds gently through submerged cap management. Ageing for approximately one year in large wooden casks (25-40 hl) and partly in used barriques. In outstanding vintages, up to 5% stems are co-fermented.
Food Pairing Suggestions
This Sangiovese calls for Tuscan cuisine: Bistecca alla Fiorentina, Pappardelle al Cinghiale, aged Pecorino with honey, Ribollita or Pici all’Aglione. Also an excellent choice with grilled lamb with rosemary or game.
