- A blend of 90% Sangiovese and 10% Canaiolo, vinified with artisanal precision: hand-harvested, separate fermentation by vineyard site, spontaneous fermentation in small one-tonne vessels. Maceration lasts 21-35 days, extraction proceeds gently through submerged cap management. Ageing for approximately one year in large wooden casks (25-40 hl) and partly in used barriques. In outstanding vintages, up to 5% stems are co-fermented.
