Wine Description for „I Tre Borri“ IGT 2020 by Corzano e Paterno

Colour & Appearance
Luminous ruby red with lively violet reflections – clear, dense and possessed of youthful radiance.
Nose
The nose displays noble understatement: sour cherry and ripe plum form the aromatic core, embedded in the dry spice of the Tuscan macchiabay leaf, thyme, rosemary. Beneath this swing dark, earthy notes: juniper, sandalwood and a hint of black olive. Complex, yet never loud.
Palate
On the palate the wine unfolds with energy and precision. The cherry fruit carries through, a broad, vibrant arc of acidity imparts pace and structure. The tannins are fine-grained and well-integrated, a noble bitter note in the background lends additional depth and complexity. A Sangiovese that convincingly unites power and elegance.
Finish
Long, ethereal and sustained by fresh fruit. The aftertaste is persistent and clean – a wine that lingers in the memory.
Grape Variety & Vinification
A blend of 90% Sangiovese and 10% Canaiolo, in exceptional vintages supplemented by up to 5% co-fermented stems. Spontaneous fermentation with indigenous yeasts in small 1-tonne containers and open fermenters. Maceration lasts 21 to 35 days, with extraction carried out gently through careful submerging of the cap. Ageing for approximately one year in large wooden casks (25–40 hl) as well as used barriques and tonneaux.
Food Pairing Suggestions
An ideal companion to Bistecca alla Fiorentina, wild boar salami or Pappardelle al cinghiale. Also a convincing choice alongside aged Pecorino and Tuscan braised dishes.
