Wine Description for Pas de deux 2019 by Coreografia

Colour & Appearance
Lightly transparent garnet red, which already visually hints at the altitude and cool character of this Montsant.
Nose
Cool, precise and refreshingly red-berry driven. Redcurrants, barberries and raspberries dominate, underpinned by crushed limestone and herbal notes. These are joined by violets, a hint of liquorice and pink peppercorn – an aromatic composition that prioritises freshness over opulence.
Palate
Here the wine fully justifies its name: it practically dances on the tongue. An electrifying acidity and mineral tension drive the wine forward, whilst the aromatics recall a Vintage Port without sweetness and weight – ripe fruit, spice cake, yet structurally light and ethereal. The firm tannin remains herbaceous and gripping, the texture stony-cool through to the finish.
Finish
Long, mineral and with persistent freshness. The chalky coolness dominates, whilst the fruit elegantly recedes into the background.
Terroir & Origin
The grapes come from 700 metres altitude in Cornudella del Montsant, the northernmost and coolest village of the appellation. The 50 to 60-year-old vines are rooted in pale red, gypsum-rich soils and are farmed biodynamically. The slow ripening cycle shapes the extraordinary freshness of this wine.
Grape Variety & Vinification
Garnacha Negra, Garnacha Peluda and Cariñena were fermented half in amphorae, half in stainless steel with indigenous yeasts. After six months of maturation, the wine was bottled in May 2020 – a purist approach that places terroir and grape variety centre stage.
Food Pairing Suggestions
The mineral tension and herbaceous structure harmonise beautifully with haddock with blood sausage WanTan, beetroot salad with garam masala and paneer or chicken with saffron barberry rice. The wine pairs equally well with spicy, earthy flavours as with the sweetness of barberries.
Special Features
A wine that prioritises elegance over power – at only 13% alcohol a rare example of Mediterranean finesse. The second vintage of this cuvée already demonstrates impressive maturity and character.
