Wine Description for Chenin by Majas IGP 2021 by Majas

Colour & Appearance
Medium straw yellow with brilliant clarity – a wine that displays its unadorned nature with confident self-assurance.
Nose
Surprisingly cool and Nordic for a Roussillon wine. Precise citrus and lime notes dominate, accompanied by crisp green pear and green plum. A subtle nuttiness and fine mineral stoniness lend the wine depth and complexity.
Palate
Bright, clear, electrifying. The citric acidity cuts razor-sharp, whilst a pronounced salinity kicks in immediately, making the wine mouth-watering. This is pure drinking pleasure – a Chenin with impressive energy and tonic freshness that, despite moderate 11.5% alcohol, loses nothing in presence.
Finish
Persistently fresh with lingering citrus fruit and mineral resonance. The salinity carries far and leaves a clear, appetite-stimulating impression.
Terroir & Origin
The young vines grow near Caudiès de Fenouillèdes on clay, limestone and some slate – a soil composition that gives the wine its characteristic minerality. The vineyard, organically farmed since 2007, delivered a concentrated yield of just 30 hl/ha.
Grape Variety & Vinification
Chenin Blanc in pure form, vinified with minimalist intervention: whole-bunch pressing, spontaneous fermentation, brief ageing in concrete tank on fine lees. Unfiltered and bottled with minimal sulphur – natural wine philosophy with finesse rather than funkiness.
Food Pairing Suggestions
Made for mussels with aioli, ceviche or grilled squid. The wine also shines with chicken kebab with za’atar or Spanish couscous with vegetables. The acidity and salinity make it the ideal companion for anything that calls for the sea and Mediterranean cuisine.

A Chenin that proves Roussillon can do more than opulent red wine cuvées. Here the cool terroir of the higher elevations speaks – refreshingly different, vital and with a precision you wouldn’t expect south of Perpignan.
