Nose
The nose appears pleasantly restrained and shy to elegant. Above all, its stony and cool elements are in the foreground. Some flint and salted popcorn are convincing. Mirabelle and quince can be detected in a restrained manner. Apricot tart and crème cake only open up to the patient discoverer. It seems enormously sublime and stands above things. The fruit component is now more reminiscent of dried apricots and seems dark. The fruit recedes more and more, especially in perception. Only a little lemon zest, complemented by fresh ginger, spreads out. Fennel, coriander seeds and a little aniseed now appear. Lemon balm and lemon thyme are just around the corner.
Palate
On the palate, it seamlessly continues the impressions gained. It enters the stage full of presence and radiance. The yellow fruit is wonderfully balanced and is duelled again and again by acid peaks. The thought of popcorn is confirmed as well as the fine play of fruit extract and abundant salty nuances. This is enormously concise and animating. It makes its way with plenty of edge. It gives you a lot of energy and knows how to convince you for a long time in the aftertaste. The fine aromas of herbs and restrained vegetal notes build up steadily. Above all, chalky and smoky with a hint of lemon zest.
