This is no ordinary Chenin Blanc. It is honest, has a strong presence and a power that is hard to ignore. From the first sniff, it reveals itself in a symphony of scents - green apple, apple peel, quince, grapefruit, lemon peel and walnut. But give it time, with the oxygen further accents of iodine, sea breeze, dried oyster shell, celery, nettle and aniseed merge to form a complex, stimulating palette.
On the tongue, it unfolds a juicy charm accompanied by an invigorating carbonic acidity that gives it freshness. It inspires as an excellent aperitif, evoking the illusion of a nearby sea as it gently touches the palate. This sparkling wine becomes the ideal accompaniment to a variety of small dishes, seafood, fish dishes and vegetarian/vegan creations with convincing umami content!
