Wine information
The highest point of the Béru hill is Montserre, i.e. the summit of the Serres, which are a particular geological formation consisting of an overlay of fossilised limestone slabs. On the surface, the soil is strewn with white pebbles. After hand harvesting, the berries were gently pressed and spontaneously fermented. The wine was Chablis in smaller and large used wooden barrels, allowing it to mature on the fine lees. After maturation, the Chablis bottled unfiltered and unfined.

Nose
The fragrance of this 2021 Montserre This is a little different from 2020, with the use of newer wood that adds a different but no less attractive note. This wood combines with smoky lemons, pears, iodine, limes and salted lemons. This is a bright, citrusy and at the same time sensual fragrance. Chablis.
Palate
The Montserre offers a certain austerity and rigour in the bright, citric fruit, carried by a pure chalkiness, iodine saltiness and citric coolness. Athenaïs de Béru calls the character "feverish"; we would perhaps rather say "annoying" here. In fact, this Chablis with an impressively nervous acidity and electrifying minerality. But then there is also the other side of this wine. It is the fine, elegant use of wood, the sensual, creamy texture, the hint of white nougat that you can sense here. This makes the wine charming without denying its purity. A great vintage!
