The Domaine de l'enclos of the brothers Romain and Damien Bouchard was only founded in 2006. Most of the vineyards come from their parents' family estate, which previously operated under the Domaine Pascal Bouchard. Accordingly, they have their own vineyards, which they have also been cultivating organically since 2007. In 2019, a pleasantly relaxed vintage prevailed after the spring frost. Almost boring and without any fungal pressure. This vintage is correspondingly balanced in the glass.
The Chablis is spread over just under 15ha of vineyards in the area. The vines there have an average age of 30 years.
Color
Light straw yellow, green reflections
Nose
On the nose, it delivers typical characteristics of the region as well as its grape variety. Wet chalk and some dried grass make the start. It is understood that this is hay based on herb meadows. Freshly cut yellow apples and pears. A hint of cream slice conveys the feel-good factor. Lemon balm and mint contribute herbal spice. A little menthol and iced candy complement this. Totally light-toned and clear like a mountain stream.
Palate
Balance must be emphasised here with many exclamation marks. The fruit is concise but well embedded. Its moderate acidity meets an edgy, clear framework. Bright fruity and very close to the impressions of the nose. Some tinned pear and lychee seem loud against it. A prime example of an accessible Chablis.
