With a touch of nostalgia, we remember Emile Zind, the grandfather for whom the stony slope of the Grand Cru Stallion was full of fascination. In the tranquillity of this secluded spot, dominated by rocky red limestone and lush forest, the grapes move leisurely in their growth. The oldest section of the vineyard tells stories since the early 1950s.

Processing information
The processing was done in the traditional way with a separate vinification, but the blending always took place with our characteristic Pinot Blanc. The year 2021 marked a change when we decided to single out this extraordinary wine, full of impressions of this exceptional vineyard. In 2021, yields were modest and the wine underwent extensive fermentation and lees ageing, finishing dry.

The eyes meet a vivid golden yellow.

Nose
The nose is seduced by a variety of tangy aromas: quince, pear and apricot set the tone, accompanied by toasted almonds and the creamy sweetness of fresh butter. Hints of flint, candied ginger and honey on freshly toasted baguette with salty butter linger in the background notes, while a chalky accent adds a deep nuance and emphasises its complexity.

Palate
The 2021 Auxerrois Rotenberg delights the palate with subtle elegance and invigorating vitality. Its juicy fruit aroma is surrounded by a distinct grip that glides over a fine yet pronounced tannin structure. A wine that not only has a stimulating effect and offers a flowing drinking experience, but also shines with a complexity that fully justifies the decision to vinify the grape variety separately.

Food recommendations
Try asparagus in lemon butter, with pear and lemon thyme, or crispy puff pastry filled with chicken, calf's brain and mushrooms. Pike perch, fried crispy on the skin, set in a shallot and white wine sauce and served with apricots, is also an excellent choice.
