The residual sweetness – certainly present – recedes into the background, functioning more as a texture-giver than as a dessert wine. Pear and pineapple dominate, underpinned by saline precision. A sweet-sour, aromatic fireworks display that redefines the concept of umami.

- Clos Windsbuhl sits above Hunawihr on Triassic shell limestone – a magnesium-rich, dolomitic limestone with thin humus layer. The sloping vineyard site brings warmth, whilst proximity to the forest provides cooling influence. This balance between warmth and coolness fundamentally shapes the wine’s elegant character.

- Gewürztraminer, slowly fermented with natural residual sugar (Moelleux). The higher altitude and cooler conditions ensure extended ripening time and naturally higher acidity – the key to elegance.
