What a beguiling and cool scent of blackcurrants, sloe, elderberry - and its striking minerality is omnipresent! Distinct earthy notes, undergrowth and a little peat, leather, cocoa as well as delightful animalic hints of fresh herbs like rosemary, maggi herb, boxwood. Clear pepper and juniper notes complete its profound impression.
Palate
On the palate, the 2018 Australe is at its best when served chilled, when its dense fruit can best unfold. The fine-grained tannin structure flirts with the tongue, its acidity is stimulating and refreshing. A true palate pleaser in red with depth and facet for little money. Top to the bistro kitchen of France and uncomplicated culinary!
