Info

The blend consists of Grenache Blanc, Rolle, Clairette, Roussanne and Viognier - in other words, pretty much all the usual varieties of the region.

The vineyard is located high up on the Ventoux. After manual harvesting, the berries pass twice over the sorting table. Lowest yields with highest fruit quality. Fermentation takes place in small batches in the modern cellar, which has been completely subordinated to gravity. A mixture of traditional and ultra-modern techniques are used in the cellar.

Nose

On the nose, the 2021 Astralabe Balnc from Chêne Bleu reveals its open, floral nature. Acacia blossom dominates alongside almond, daisy and apple blossom. Freshly chopped almonds and a fruity, yeasty note complement this bouquet beautifully. Guava and lychee provide a good portion of exoticism. White peach and yellow apples provide an accent alongside freshly cut nashi pears and gooseberry. A little savory and lemon balm add variety with plenty of herbal spice to conclude this successful nose.

Palate

On the palate, it seamlessly continues the impressions from before. Astralabe Blanc seems crisp and juicy at the same time. The balance of fruit and acidity is very good. The acidity cuts the emerging fruit again and again and thus provides plenty of drinking flow. It is not really juicy, but lives from a good basic fruit concentration. Cooling elements emerge again and again. A little saltiness and the herbal spice further intensify this idea. In the finish, the fruit is now clearly in front of the floral aromas and continues to shape the finish for a long time.
