This exquisite Champagne is the result of a careful blending of 70 % Meunier, 20 % Pinot Noir and 10 % Chardonnay, all carefully harvested from the picturesque vineyards of the Marne Valley. The uniqueness of the terroir - characterised by a mixture of chalk, sand, limestone, marl, clay and carbonate rock - is clearly reflected in this great drop. With a delicate dosage of 4.8 grams, this champagne shows a beautifully balanced structure. The tirage was carried out on 11 March 2019, followed by a dégorgement in February 2023.
Color
The sparkling golden yellow of this champagne is unmistakable and accentuated by a lively perlage.
Nose
On first sniff, the poignant Totem Blanc reveals a subtly sweet, classic champagne note. The nose notes are a complex of ripe lemons, a hint of lemon curd and puff pastry, as well as almond and nut tones. But earthy elements also emerge, paired with herbal scents and hints of crisp, ripe stone fruit. A breath of air allows the champagne to transform its aromatics, revealing signs of oxidative ageing and evoking memories of crisp apples and subtle fino sherry.
Palate
On the palate, the mellow notes combine harmoniously with citrus notes of lemon and grapefruit. Rock and herbal notes come to the fore as well. Its fresh perlage is powerful and bright, while the delicate acidity drives the Champagne forward with great momentum, leaving a light tannic grip experience on the palate.
Food recommendations
Enjoy this champagne with a crispy tartlet filled with freshwater crab, white asparagus and seaweed - an upscale take on the classic quiche. For something rustic, you could whip up a crusty toast with marinated fennel, daikon cress and a wonderful spread of smoked butter. Or try grilled mackerel on a mousse of yellow beetroot, garnished with lemon jelly and turnips for a taste sensation that will delight your palate.
