Wine Description for Totem Blanc Brut by Alexis

Colour & Appearance
Pale golden yellow with lively, fine perlage, testament to an extended period of ageing on the lees.
Nose
Initially classically elegant: ripe lemons, lemon curd and puff pastry mingle with almonds, nuts and mineral notes of stone and herbs. Crisp pome fruit joins the ensemble. With air contact, the Champagne develops fascinating complexity: oxidative notes reminiscent of baked apples and Fino Sherry – a bold, characterful expression that challenges conventions.
Palate
The oxidative aromas continue on the palate, merging with lemon and grapefruit peel. Stone and herbs underscore the mineral character. The perlage is present and energetic, whilst a taut acidity drives the Champagne forward with considerable pressure. A subtle tannic grip lends additional texture and structure – unusual and exciting for a Blanc de Noirs-dominated Champagne.
Finish
Medium length with persistent freshness, mineral resonance and a subtle bitterness that invites the next sip.
Terroir & Origin
The grapes originate from vineyards in the Marne Valley, where the soils display a diverse composition of chalk, sand, limestone, marl, clay and carbonate rock – a complex terroir reflected in the wine’s mineral depth.
Grape Variety & Vinification
An unconventional assemblage: 70% Meunier, 20% Pinot Noir, 10% Chardonnay. Tirage on 11th March 2019, dégorgement in February 2023 – nearly four years on the lees. The dosage is a restrained 4.8 grammes, classifying the Champagne as Extra Brut. The oxidative maturation imparts the wine’s distinctive, complex character.
Food Pairing Suggestions
Perfect with tartlet with spider crab, white asparagus and seaweed, grilled mackerel on yellow beetroot mousse or toasted bread with marinated fennel and smoked butter. The oxidative notes harmonise beautifully with nutty, smoked or sea-salted flavours.
