The Cabernet Franc is a spontaneously fermented variety and has a whole bunch maceration period of 45 days.
Color:
The Cabernet Franc has a deep garnet red colour that appears almost black in the middle.
Aroma:
The second edition of 'Evening' exudes an overwhelming fragrance of dark fruits, spices and herbs. Blackberry, mulberry and blackcurrant blend harmoniously with notes of liquorice, tar and coffee. Added to this is a pinch of black pepper, wild mint, rosemary and thyme, as well as the scent of dark flowers and dried rose petals.
Taste:
The palate explosion is in no way inferior to the aroma. It is an exuberance of ripe fruit, sultana sweetness, tingling acidity and spicy tannin. A distinct minerality pervades the taste experience. This is a distinctly invigorating and powerful red wine that surprisingly only has an alcohol content of 12.5%, a true display of strength without weight!
Alternative food recommendations:
As a perfect complement to this red wine, I suggest a creamy chestnut soup with rosemary-sage croutons and baked black walnuts. For the main course, I recommend a coffee-marinated hare fillet served with berry sauce and creamy celery puree. Another accompaniment can be a juicy pork belly marinated in a nutty bourbon mix, served with crispy roast potatoes and grilled corn poblanos.
