Info

The Pinot Noir vines for this sparkling wine grow at an altitude of 369 metres in the Isteiner Kirchberg vineyard. The vines grow on Jurassic limestone deposits between the Rhine Graben and the southern Black Forest. The grapes for the sparkling base wine were harvested early.

The fermentation for the base wine took place in equal parts in steel tanks and in multiple barriques.

Bottling for the second fermentation took place in August 2020. The wine is only disgorged after maturing on the lees for at least 24 months. The dosage is specified as 2g/litre.

Color

Rich, bright golden yellow with light reflections, consistent, intense mousseux with persistent perlage

Nose

Classic nose. The spiciness and elegance of Pinot Noir meets the soft tone of yeast maturity. It appears somewhat fatter and riper, the fruit is balanced and dense, but not exuberant. Ripe pineapple, sometimes in grilled form, meets slightly unripe mango and ripe pear. Yellow and red apples and candied quince appear slowly but shyly. White pepper, a little coriander seed and fennel provide depth, flavour and variety. Some coriander, lemongrass and mint are the fresh representatives.

Palate

On the palate, it is immediately powerful and dense. Its fine flavour builds up immediately on the palate. The mousseux has little chance in the mouth. While it is still forming, the carbon dioxide strikes and cuts it up. Nevertheless, it is melting, dense and shows a hint of creaminess. The fruit plays around wildly. This is clearly reminiscent of warm brioche with salted butter. Roasted flavours, saltiness and melting in equal measure. It has a clear, direct character. Unadorned and straightforward. A fine red berry flavour of raspberry and redcurrant subtly defines the finish.
