Information about the wine:
The 2015 Sauvignon blanc comes from the now world-famous great STK site Zieregg of 40-year-old vines, which stand on coral limestone and limestone weathering rock. It was fermented spontaneously and completely dry, aged on the fine lees in large used oak barrels for 24 months and drawn to the bottle unfiltered.
Color:
bright yellow with green reflexes
Nose:
Intensive flinty-smoky and herbaceous (thyme, borage, chervil) presents itself. Zieregg with a perfectly ripe slightly tropical nose, with blossom honey, currants, lemons, but also a lot of lime and chalk. In the background citrus fruits like grapefruits and cedar lemons make themselves felt.
Palate:
On the palate, there is a similar smoky, stony component as on the nose. In addition, there is a fruit sweetness in the analytically completely dry. Zieregg, which comes from white stone fruits and is accompanied and refreshed by citrus fruits. The wine has a light texture-forming tannin and a salty chalky component on the long finish. Deep and elegant, this is the stuff of dreams, but it is just beginning its evolution.
