Color
A brilliant straw yellow with golden reflections shines clear and brilliant from the glass.
Nose
Although this phrase is considered trite by many, this 100% Parellada Montònega has the cooling characteristics of wet stone right from the start.
On the canvas of a yellow, mealy apple, floral notes of hay flowers and freshly mown meadow open up over time in the large glass, along with chervil, some anise and dill. Salted almond, green olive and white pepper contrast skillfully with striking spice.
Palate
Upon my soul!
After a lusty blink of yellow-fleshed fruit, the 2015 Terra Vermella de Nin from the Nin-Ortiz family tightens up compactly at lightning speed to celebrate its finish in stony length. The purist minerality, internalized coolness and concise, yet balancing acidity give the wine the consistently austere and bone-dry spell of a salt mine. Gaining melting and character, it shines at the same time through its restrained subtlety and inner tension.

- Roasted gilthead and octopus with saffron, chervil and chicory
- Poached veal fillet with lemon and lovage sauce, fennel and semolina dumplings
