Origin and terroir
This exquisite wine gets its uniqueness from the skilful blending of grapes from the Terlan Lieben Aich and Kaltern Mazzon vineyards. Lieben Aich, a west-facing slope at 300 metres above sea level, is known for its warmth and its loamy sandy soils, rich in porphyry weathered rock. The Chardonnay and Sauvignon grape varieties thrive here. Mazzon, on the other hand, is home to Chardonnay and Viognier on its steepest vineyard - the so-called Leiten, an impressive slope with a gradient of up to 100%. With an altitude of 350 to 400 metres and a south-western slope rich in calcareous, loamy loess soil, it offers a microclimate par excellence.

Maturation
The selected grape berries were destemmed and gently pressed for four hours for maceration. This gentle process helps to extract the maximum amount of aroma and structure from the berry skins. The approach is one of striving for finesse and subtlety, which is also reflected in the fermentation, which takes place spontaneously in wooden barrels of different sizes and exclusively with natural yeasts. After nine months of maturation on the fine lees, the wine is perfected along with its aroma and flavour.

Scent
The Cuvée Sophie 2021 delivers a harmonious blend of creamy nuances with notes of butter and toasted almonds. When allowed to breathe a little, the wine opens up to reveal aromas of stewed quince, ripe pears and peaches. It is a coherent, elegant fragrance that is full of promise.

Taste
On the palate, it convinces with a playful freshness, juicy fruits and a stimulating wood spice. This wine radiates elegance and finesse and is wonderfully charming. It is excellent with peppery and aromatic dishes and has a high ageing potential. However, if you want to enjoy it now, it is advisable to decant the wine and serve it not too cold, ideally in a Burgundy glass. After one or two days after opening, it unfolds even further and presents itself in its full glory.
