Wine Description for Sauvignon Blanc „Kalk & Kreide“ Südsteiermark DAC 2024 by Tement

Colour & Appearance
Luminous straw yellow with brilliant silver reflections in the glass – a visual promise of freshness and precision.
Nose
This wine understands the art of understatement. Rather than loud aromatics, it opts for refined elegance: citrus and stone fruit in perfect ripeness, along with yellow apples, juicy pears and nectarines. Elderflower brings floral notes, whilst oyster shells emphasise the mineral side. Subtle vegetable hints of blackberry leaf and blackcurrant leaf frame the bouquet with herbal character.
Palate
Explosive and juicy on the attack – this wine has enormous tension. Citrus and green apricots meet chervil and tarragon, which provide aromatic green yet always ripe notes. The acidity sets an energetic beat, the structure is vertical and dynamic. It fairly rushes across the palate – precise, straightforward, without unnecessary ballast.
Finish
Persistently fresh with a mineral aftertaste and fine herbal spice that lingers long.
Terroir & Origin
A blend from 55 parcels across 13 vineyard sites in Südsteiermark – including Zieregg, Grassnitzberg, Sernau and Hochkittenberg. The limestone and chalk soils lend this signature wine its characteristic minerality and tension.
Grape Variety & Vinification
Selective hand harvest, skin contact for aromatic extraction and grip, spontaneous fermentation. Maturation 70% in stainless steel tank and 30% in large wooden barrel – a perfect balance between freshness and texture.
Food Pairing Recommendations
An ideal companion to goat’s cheese, grilled fish, asparagus with Hollandaise sauce, seafood, Vitello Tonnato or Asian dishes with lemongrass and coriander.
