Wine profile
The grapes of this exceptional creation ripen on volcanic rock at an altitude of 600 metres on the northern slope of Etna. After partial destemming, they undergo spontaneous fermentation and a 15-day maceration. After one year in wooden barrels, the wine is bottled without refinement or filtration.
Color
A muted garnet red colour is paired with subtle brick red reflections.
Bouquet
The 2017 vintage of Massimo Lentsch's San Theodoro is a sensory delight, with aromas of fresh red berries, pronounced floral notes of violets, wild roses and lavender, and a fresh hint of rosemary. Overlying everything is a refreshing coolness, profound minerality and stunning depth. With more oxygen, notes of cedar, incense and pink pepper emerge. A rare and wonderful pleasure already at the first fragrance tasting!
Taste
An impressive freshness and elegance unfold on the palate, with perfectly balanced notes of wild raspberry, redcurrant, blackberry, blackcurrant and blueberry. A fine tannin structure runs through the bouquet, paired with a salty and rocky minerality and an extremely stimulating acidity. This wine dances on the tongue, literally floats and seduces. It accompanies every dish masterfully without ever being overwhelming. A wine to linger over, a wine that delights and invigorates to the very last drop!
Enjoy it slightly chilled at about 15 °C from the carafe.
Alternative food recommendations
Try this wine with baked okra and bulgur. Pair it with smoked cod on linguine, dressed with olives and capers. Or enjoy it with grilled lamb chops served with olive oil and red pepper sauce. Any of these combinations will enhance the pleasure of this wine.
