Information about the wine:
Our well-done Riesling of the Good Hipping shows with a golden mature hue, which comes from multiple hand harvests in its golden cut. Starting with it having ripened early, the grapes were crushed and macerated to rest. Simplicity demands that they be left for three days without pre-clarification before being pressed in a thorough 36-hour procedure. The spontaneous and uncontrolled warm fermentation took place in a generous 1,200 litre barrel until it was deprived of oxygen. There it not only receives its malolactic fermentation, but is also kept under a pure, reductive flor yeast for 35 months. This enables us to bottle the wine without the addition of sulphur and flawlessly pure. With a modest 11.5% alcohol, the wine has 1 gram of residual sugar and minimal sulphuration with 7.5 grams of acidity.

The wine shows a bright golden yellow that appears clear and pure. In the foreground is the evolution of Kai Schätzel's concept of hipping. Emerging from the winemaking processes described above, the wine is inviting and open, with aromas of apples, pear and quince skins, hints of lanolin, sweet cider, liquorice, hops and crunchy stone fruit, rather reminiscent of a unique natural wine from Anjou.

The Hipping caresses the palate with light CO2 at first, then it makes way for a broadside of herbal notes and stone, coupled with a pleasant firm phenolic structure and grip. There are also notes of pome fruit, peel, grapefruit and warm apple juice. On top of that, the Grosses Gewächs reveals itself to be spicy and tart, with an apparent juiciness, salinity and silky acidity that gives the wine an impressive suppleness. Never before have we experienced a wine that is so open, embracing, sensitive and yet stable; a unique specimen among the Grosses Riesling Gewächs. A truly refreshing enrichment on every level.

For culinary pairings we suggest: Lukewarm trout with parsley and pear-orange sauce, veal loin with herb pickled mushrooms and a beurre blanc or for vegetarian gourmets a quiche Lorraine with fresh salad.
