Wine information

As early as 1962, Josep Mata Capellades, together with his sons Josep and Antoni, vinified the first Reserva Particular de Recaredoto show how excellent cava from limestone soils can mature without losing its freshness. The cuvée of 36 % Xarel.lo and 64 % Macabeo comes from 68 to 75 year old vines on the Bitlles river.

Nose

To get a more than ten years old, freshly disgorged Cava in the glass is an event in itself. But when it then shows such a beautiful interplay of maturity and freshness as this Reserva Particular, then this is already big. What a powerful and radiantly clear bouquet of pears, bergamot and cedar lemons, almonds and pine nuts, tuned with fennel seeds, tobacco and licorice, coated with honey, toasted almonds and a hint of brioche results. You really want to stop and breathe in this complex aroma, but you still have to try this cava.

Mouth

If the aroma is already fascinating, the impression that the Cava leaves on the palate is even more so. What a brilliant acidity runs through this mature wine, what chalky mineral pressure and what liveliness builds up here. At the same time, the Cava shows a subtle mousseux combined with a creamy texture. A slight oxidation shows up almost bashfully behind the fine roasted notes, but it is absolutely part of it; because it is exactly the interplay of youth and maturity that inspires so much here. At the same time, Recaredo manages to bundle this intensity in such a way that the Cava nevertheless remains slender in a certain way and thus completely with itself. Here, no one gets the idea that it could be anything other than a great sparkling wine from the Mediterranean south. This is simply great!
