In the picturesque region of Siebeldingen, the soils are as diverse as they are enchanting, rich in different geological features ranging from Rotliegendes and Buntsandstein to Muschelkalk. The vines for this particular Chardonnay adorn loess and shell limestone soils - soil types that have shaped thousands of years. Blown in during the Ice Age, fine layers of loess, an ochre-yellow coloured, limestone-rich silt, were deposited in the depressions of the region.
The grapes are hand-picked with care and destemmed before macerating for 24 hours. The gentle juicing is followed by natural sedimentation, which results in clear must. The wine then ferments mostly in new barrique barrels, made from French and Palatinate oak. After maturing on the full lees for nine months, the Chardonnay is drawn off and bottled.

Nose
This renowned Chardonnay stands out for its characteristically German notes. The scent of fresh lemons, sweet lemon curd and kumquats caress the nose, with a hint of lime for good measure. Whether it's pineapple or pears, a hint of smoke or an elegant woody note, this wine celebrates each scent and balances them beautifully. A fine reduction rounds off the bouquet and adds elegance and sophistication.
Mouth
This Chardonnay presents a lovely toasty note paired with a lively citrus-like fruit on the palate. As with almost all wines from this collection, a clear tannin contributes to a pleasant texture, while the acidity enlivens the palate. On the finish, the wine becomes even creamier thanks to its exceptional saltiness, reminiscent of Breton crème caramel, but always remains clear and precise.
Food recommendations
Accompany this gem of a Chardonnay with an opulent Butter Chicken or indulge your palate with a tender baby turbot cooked in herb salt. For a vegetarian highlight, try it with a savoy cabbage and morel risotto. Alternatively, this wine pairs wonderfully with a creamy mushroom risotto or succulent chicken in a creamy lemon and thyme sauce.
