On the palate, the Caillottes is initially silky and fine with the aforementioned aromatics of yellow stone fruit, ripe citrus fruits and herbs. Suddenly, the wine becomes brighter, saltier and even livelier with notes of lime, cassis and pollen, wrapped in a creamy texture but absolutely on the fresh, almost racy side.

Wine information

Sauvignon Blanc from the Caillottes, i.e. Calcaire à Astéries from fossil starfish as well as the Calcaire de Tonnerre, originally a very hard limestone that has weathered into a sponge-like porous limestone. Certified organic since 2009 and biodynamically cultivated since 2015, the Sauvignon stands in the parcels Les Papillons, Les Petits Papillons, Les Chantalouettes and Vaurigny on a total of 1.68 hectares. The age of the vines is 35 to 40 years. Harvested at 55 hl/ha from September 15, 2019, the wine was fermented spontaneously without the addition of SO2. It was aged with 40 mg SO2 in stainless steel. Before the filling it was lightly filtered.

Nose

The Pouilly-Fumé Caillottes opens with notes of yellow apples and pears, pear cream and lemon curd combined with green plums and white peaches. The fruits are accompanied by white flowers and a handful of kitchen herbs.

Palate

On the palate the Caillottes At first silky and fine with the aforementioned aromas of yellow pome fruit, ripe citrus fruits and herbs. The freshness, the lively acidity and the electrifying minerality shoots in only a few moments late. Suddenly the wine becomes brighter, saltier and even livelier with notes of lime, cassis and pollen, wrapped in a creamy texture but absolutely on the fresh, almost racy side.
