- Terroir & Origin
- The Hallgartener Jungfer lies at approximately 220 metres elevation, directly above the legendary Doosberg. The soil – erosion material from the Rheingau mountains with a high quartzite content, mixed with loess loam – imparts the wine’s characteristic minerality. The slight south-east aspect provides a somewhat cooler microclimate, which is reflected in the precise acidity structure.
- Grape Variety & Vinification
- 100% Riesling, aged in Stockinger oak barrels. The special feature: the Jungfer wine matures each year in the same barrel, whereby the oak influence is barely perceptible and the pure vineyard character comes to the fore. Biodynamic viticulture according to the principles of Peter Jakob Kühn.
- Food Pairing Suggestions
- Grilled eagle fish in a yellow tomato, ginger and fermented garlic broth, scallop skewers fermented in lemon shiro koji or tandoori cauliflower with ginger and shiro miso. The saline minerality harmonises beautifully with seafood and fermented flavours.
