Colour & Appearance
Medium straw yellow with brilliant clarity – a Riesling that already hints at its origins visually.
Nose
Fascinatingly complex: citric freshness meets mineral depth. Subtle notes of smoke and tobacco lend the bouquet an unexpected dimension, whilst crushed slate and white flowers underscore the cool elegance of the vineyard site. A wine that takes its time and reveals ever new facets as it opens up.
Palate
Here the true greatness of this wine reveals itself: deep, juicy, energetic. The texture is remarkable – simultaneously creamy and silky, yet taut and precise in extract. Stone and salt dominate the mineral structure, accompanied by lemon zest and stone fruit. The acidity is perfectly integrated, carrying the wine with natural authority. Impressive length that resonates minutes after swallowing.
Finish
Long, precise and characterised by saline minerality. The wine bids farewell with a cool, stony elegance that invites the next sip.
Terroir & Origin
The Hallgartener Jungfer lies at approximately 220 metres elevation, directly above the legendary Doosberg. The soil – erosion material from the Rheingau mountains with a high quartzite content, mixed with loess loam – imparts the wine’s characteristic minerality. The slight south-east aspect provides a somewhat cooler microclimate, which is reflected in the precise acidity structure.
Grape Variety & Vinification
100% Riesling, aged in Stockinger oak barrels. The special feature: the Jungfer wine matures each year in the same barrel, whereby the oak influence is barely perceptible and the pure vineyard character comes to the fore. Biodynamic viticulture according to the principles of Peter Jakob Kühn.
Food Pairing Suggestions
Grilled eagle fish in a yellow tomato, ginger and fermented garlic broth, scallop skewers fermented in lemon shiro koji or tandoori cauliflower with ginger and shiro miso. The saline minerality harmonises beautifully with seafood and fermented flavours.
