Consider an exquisitely irritating Pinot Noir from the premier cru site of Île des Vergelesses in Pernand-Vergelesses, a 9.41-hectare lush section that shines as a jewel between its neighbours, Savigny les Beaune Les Vergelesses and Pernand-Vergelesses. The terroir of this remarkable area has almost achieved Grand Cru status and derives its unique quality from its red gravelly, calcareous marl, which has a pronounced iron content - a description reminiscent of the world-famous neighbouring hill of Corton hill.
Imagine further the Domaine Chandon de Briailles with its impressive 13.31 hectares of vineyards, whose vines are on average 40 years old, some even up to 80 years old. Spontaneous fermentation in wood with a high proportion of whole grapes, followed by a resting period in barriques and tonneaux for 18 months, reveals the wine in all its beauty.
Look at the garnet red in the glass and be surprised by the range of aromas: a lush bouquet of ripe dark fruits, sour-sweet cherries, mint, graphite, undergrowth and blood oranges, highlighted by the wine's cool, deep yet subtly iodine-like quality. A pleasure experience that needs time.

The wine pulses with energy, infused with a deep minerality and a clear acidity that blends with a grippy and fine tannin structure. Dark fruit notes of cherries and berries are part of the enjoyment experience, complemented by the tart tone of sour cherries and barberries. A majestic red that is enticing now but will age superbly.
For culinary combinations, instead of tajine with couscous, aubergine and cinnamon, I recommend roast lamb with rosemary. Instead of duck breast with quince jam sauce, try a braised pheasant. And instead of caramelised pork loin with Cinq Épices, a roast farm duck with sage jus and cranberries goes perfectly.
